Bottled on 8/11/2005 After 2 years in Oak. This Syrah invites your taste buds to experience the explosion of fruit. It?s color is deep rich ruby red. Unveiled on the palate are; Plum, Currant, Blackberry, Cherry and Cassis fruit. The fruit is intertwined with layers of spice, cedar and vanilla. The Syrah is complex, rich, and well balanced. Tannins are laid back but, provide the right backdrop for the fruit to come forward and please the palate. Fermentation Syrah is produced in a unique style, 1/3 whole cluster berry fermented in small open top fermenters to facilitate maximum flavor and color extraction. The cap is punched down several times a day over a period of 7 to 10 days. When fermented dry, it is pressed off and racked into French Oak barrels. Barrel Age The Syrah is aged in 100% French and American Oak for twenty-four (24) months. The wine is further aged for an additional 12 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes.
