1997 Nichols Pinot Noir, LaColline Vineyard, Arroyo Grande Valley Wine Spectator score of 87 Wine Spectator says, ?Ripe, rich-Textured and focused, showing a tight range of tart cherry, berry and tea flavors that linger on the plush finish.? Winemaker says, ?The Nichols Pinot Noir is ruby red. It has an appealing texture and is full body. Also, it has concentrated fruit with rich sensual layered flavors such as cherry, plum, berry, cedar, toast, smoke, spices (clove), caramel and vanilla. It finishes with a zesty, spicy quality, while the tannins fold in, to give it a nice earthy aftertaste. Drink through 2007.? Pinot Noir is produced in the traditional Burgundian style, fermented in small open top fermenters to facilitate maximum flavor and color extraction. The cap is punched down several times a day over a period of 7 to 10 days. The Pinot Noir is aged in 100% French Oak from the Allier, Never and Troncais Forest, for eleven (11) months. The wine is further aged for an additional 9 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes.
