Won head to head Wine Competition TASTVIN at Restaurant AOYAMA against 1997 Domaine Romanee Conti (DRC) La Tache in Tokyo, Japan The 1997 Nichols Pinot Noir is deep ruby red. It is full bodied and has a silky mouth feel. Also, it has concentrated fruit with rich deep flavors such as raspberry, cherry, plum, cedar, toast, smoke, spices (clove), caramel and vanilla. It is very complex and well balanced with extreme depth and has a long finish. Pinot Noir is produced in the traditional Burgundian style and techniques, fermented in small open top fermenters to facilitate maximum flavor and color extraction. The cap is punched down several times a day over a period of 7 to 10 days. The Pinot Noir is aged in 100% French Oak from the Allier, Never and Troncais Forest, for eleven (11) months. The wine is traditional aged for an additional 9 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes. Nichols Winery & Cellars TM Nichols Winery is a small winery established in 1991 to produce ultra premium wines with limited production of each Varietal, around 1,200 cases. The winery produces Chardonnay, Pinot Blanc, Pinot Noir, Cabernet Sauvignon and Franc, Merlot and Zinfandel. It is located in the Edna Valley, San Luis Obispo, CA. Central Coast Wine Region; Monterey County, Santa Lucia Highlands Appellation Pisoni Vineyard lies in the Santa Lucia Highlands which is located at the base of the Santa Lucia Mountains in Monterey County. Warm days, good for fruit development and ripening, are countered by cool nights and mornings. Cool nights allow the vines to shut down and rest. The was propagated from cutting from one of the highest regarded vineyards in Burgundy.
