2001 Nichols Pinot Noir, Odyssey Thurlstone, Edna Valley Bronze Medal Riverside International Wine Competition Bronze Medal International Eastern Wine Competition Winemaker says, This Nichols Pinot Noir is ruby red. It has an appealing texture with full body. Layered are concentrated fruit, such as cherry, with rich sensual flavors like spice, plum, cola, and earth notes that turn elegant and supple on the finish. This is all layered within smoke and toast. It is quite sophisticated, complex and seamless. Pinot Noir is produced in a unique style, 1/3 whole cluster berry fermented in small open top fermenters to facilitate maximum flavor and color extraction. The cap is punched down several times a day over a period of 7 to 10 days. When fermented dry, it is pressed off and racked into French Oak barrels. The Pinot Noir is aged in 100% French Oak from the Allier, Never and Troncais Forest for eleven (11) months. The wine is further aged for an additional 9 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes. Nichols Winery is a small winery established in 1991 to produce limited production of ultra premium wines.
