* Gold Medal, Orange County Fair 92 Score * Silver Medal- California State Fair 2000 Soleil & Terroir Pinot Noir, Edna Valley, is deep ruby red. It is full body and complex. Also, it has intense fruit layered with flavors of cherry, plum, berry, cedar, toast, smoke, spices, leather, caramel and vanilla. It finishes with a spicy earthy quality, while the tannins fold in, to give it a nice Burgundian earthy aftertaste. Fermentation consisted of initial French & American Oak Barrel fermentation and a secondary 100% Malo-Lactic fermentation in which the harsher Malic Acid is converted to the softer Lactic Acid. The Pinot Noir was aged in a combination of French Oak from the Allier, Never and Troncais Forest and American Oak for eleven (11) months. The wine was further aged for an additional 12 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes. Soleil & Terroir LabelTM Soleil & Terroir label was established in 1997 to produce limited production, ultra premium wines aged in both French and American oak. The winery produces Chardonnay, Pinot Blanc, Pinot Noir, Merlot and Cabernet Sauvignon and is located in the Central Coast?s Edna Valley of California. Central Coast Wine Region; Edna Valley Between San Luis Obispo and Oceana, California lies the Edna Valley and Arroyo Grande Valley Appellations. Both valleys are wide open to the cool Pacific winds and fog. This cool climate is ideal for great Chardonnays and Pinot Noirs. Likewise, this climate, and an unusual combination of soils, make it potentially the equal of any winemaking region in the world. The results are wines that are superbly balanced and rich in Varietal Character.
