The 1997 Chardonnay Cottonwood Canyon Vineyard is well focused, with a core of citrus, flinty apple and pear flavors that's intense and concentrated. Flavors are unveiled with delightful mineral notes integrated with caramel, vanilla, smoke, and toast. It is complex, rich, full bodied, and well balanced. It has well defined depth, and good acidity to give it a crisp lengthy finish. Drink now through 2003.

Fermentation consisted of initial French Oak Barrel fermentation and a secondary 100% Malo-Lactic fermentation in which the harsher Malic Acid is converted to the softer Lactic Acid.

Barrel Age
The wine was aged in 100% French Oak from the Allier, Never and Troncais Forest for twelve (12) months. The wine was further aged for an additional 12 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes.
