Winemaker says, ?Nichols Pinot Noir, Central Coast Blend, is bright ruby red. Very exotic, with spice notes intertwined with plum, berry and tea flavors. Leather and light earth tones add complexity and interest. Best from 2000 through 2004. Pinot Noir is produced in the traditional Burgundian style and techniques, fermented in small open top fermenters to facilitate maximum flavor and color extraction. The cap is punched down several times a day over a period of 7 to 10 days. The Pinot Noir is aged in 100% French Oak for eleven (11) months. The wine is further aged for an additional 10 months in the bottle. Aging in the bottle allows the wine to rest and round out its natural fruit flavor and aromatic attributes.
